Receipe: Chargrilled Rump with Chimichurri

1. Blitz parsley, oregano, garlic, red wine vinegar, olive oil and a pinch of chilli flakes into a rough, vibrant chimichurri — don't over-process, it should have texture.

2. Get a chargrill or barbecue properly hot and season the rump well.

3. Cook to medium-rare, then rest for at least 5 minutes.

4. Slice against the grain and spoon the chimichurri generously over the top.
