How to cook it
Get your wok or frying pan smoking hot before the pork goes in, a hot pan is the secret to a good stir-fry, searing the meat instead of stewing it. Cook the strips in small batches so they don’t overcrowd the pan, tossing constantly for 2-3 minutes until just cooked through and lightly caramelised. Remove the pork and set aside while you cook off your vegetables, then return everything to the pan with your sauce for a final toss. Because the strips are lean and thin, they’ll overcook quickly if left too long, pull them the moment they lose their pink colour.
