Receipe: Chicken Schnitzel with Lemon Caper Butter

1. Pan-fry the schnitzels in a little oil over medium-high heat until golden and cooked through, about 3–4 minutes each side. Rest on paper towel.

2. Wipe out the pan, add a knob of butter and cook until it turns nutty and golden brown.

3. Stir through capers and a squeeze of lemon juice, then take off the heat immediately so the butter doesn't burn.

4. Spoon the lemon caper butter over the schnitzels and finish with chopped parsley.
