How to cook it


Because of the bone running through it, a T-bone cooks a little differently to a boneless steak. Receipe: T-Bone alla Fiorentina

1. Bring the steak fully to room temperature — this one's too thick to cook from cold.

2. Rub with olive oil and cook on a very hot chargrill or barbecue, about 5–6 minutes a side for medium-rare, standing it on its side briefly to render the fat along the edge.

3. Rest for a full 10 minutes.

4. Finish simply with flaky sea salt, a squeeze of lemon and a scattering of rosemary — the classic Florentine treatment needs nothing else.
