How to cook it


Because the bone slows the heat reaching the meat closest to it, cook this one a little slower than a boneless steak — sear both sides over high heat first, then move it to a cooler part of the grill or turn the heat down to cook through evenly. Pat off any excess marinade before it goes on the heat so it sears rather than steams. A meat thermometer helps take the guesswork out if you want precision, and a longer rest of five to ten minutes tented under foil makes a real difference given the bone and thickness.


The marinade adds another layer of flavour to a cut that’s already generous with it, making this a genuine centrepiece for a barbecue without any extra effort on your part. It’s a great option when you want to impress without spending time on marinades and seasoning yourself.

Storage Requirement Keep refrigerated below 5°C. Use within 3 days of purchase or freeze immediately.

Receipe: Barbecued Marinated Scotch on the Bone

1. Remove the steak from the marinade and pat off any excess liquid.
2. Sear over high heat on the barbecue for 3-4 minutes each side to build a crust.
3. Move to indirect or lower heat to finish cooking through to your liking.
4. Rest for 8-10 minutes, tented loosely with foil.
5. Carve away from the bone and slice to serve.
