Receipe: Crumbed Lamb Cutlets with Minted Pea Purée

1. Blanch peas in boiling water for 2 minutes, then blitz with a knob of butter, a splash of cream and fresh mint until smooth. Season to taste.

2. Shallow-fry the crumbed cutlets in a little oil over medium heat until golden and crisp, about 3 minutes each side.

3. Rest the cutlets briefly on paper towel.

4. Spread the pea purée across the plate and arrange the cutlets on top, finished with a squeeze of lemon.
